We went here after a few recommendations from friends and we certainly weren't disappointed
We decided to go to the Trattoria next to the main restaurant, which was a lot more relaxed (and cheaper!)
Service was a little slow and sluggish at first, but soon got a lot better
The menu was written on sheets of paper and definitely not translated into English (which we actually quite liked) Although we both have a decent grasp of Italian food, we had no idea what most of the menu was, but the waitress was very descriptive in her translations
We both had soups to start - one was very rustic and like a minestrone and mine was a delicious spicy fish soup. The mains were fantastic - I had a stuffed rabbit with chick peas and very rich sauce and my wife had veal meatloaf.
Dessert was beautiful vanilla mousse with fresh strawberries and I had panna cota, both very good
The best bit, though, was that the theatre across the road had loads of musicians outside playing music and dancing all evening and the atmosphere was just perfect
Lovely evening and well worth a visit

The restaurant was recommended by an Italian colleague of mine during our four day visit to Florence. My wife and I were impressed by the quality of the food and wine.

It's one of the must do's when in Florence

Cibreo Ristorante (not to be confused with the proprietor's neighbouring but separate trattoria and caffe) was highly recommended by one of our Firenze friends and we were not disappointed. The ambience is warm and traditional. There is no printed menu: instead the daily selection of market-based appetisers and main courses are described in detail by a staff member. The meal was preceded by an array of six or seven delicious pre-appetisers including: a ricotta flan; fava beans and pecorino;almond mousse; and sun-dried plum tomatoes. For our "primi" we all chose a minestrone with "Morone" fish (a variety that we had never heard of) and it was excellent (and not too heavy). For our "secondi", two of our party selected chicken and ricotta meat balls and I opted for for a more adventuresome choice of Cervello de' Agnello (lamb's brain steamed in garlic and butter). Both selections were unusual and absolutely delicious. For dolce we opted for a raspberry tart and a cheese cake with bitter orange marmalade (definitely not your New York cheesecake) and the cheesecake in particular was superb. There is an extensive wine list with an obvious focus on Italian wines across a wide selection of price points. We chose a Hofstadter Vigna S. Michele to start and than a 2007 Tua Rita "Giusto de Nuti" (a delicious blend of cabernet sauvignon, merlot, and cabernet franc). A serious gastro experience.

We were turned onto this restaurant from a counterpart of mine who had eaten here 8 years before our trip to Florence. When the woman, our host waitress, grabbed chair, sat at our table to describe her choices for 1st plate, 2nd plate, and dessert, her passion about each choice made us wan to try them all. Once we ordered, small plates of amazing cheeses, tripe, and other authentic unusual offerings to share were incredible. Our meal was the best of all in our 2 weeks and although we did not really want dessert, they brought items to share and were fantastic. The whole experience was worth the expensive meal. If you want to splurge and have best meal in Italy and elsewhere, this is the place.
