Caffe Gilli is touristy, for sure. However, we thoroughly enjoyed two relaxing visits during our recent stay in Florence. The cafe is an old one, and the decor makes you feel like you're on an Italian vacation. The service is excellent, and the small plates we had were well prepared. The candy shop was a favorite of the kids, but be prepared for the cost (which was much higher proportionally than the lunch). It is centrally located among most of the key Florentine sites so if you're short on time, or just need a break from the heat and crowds, I highly recommend Caffe Gilli.
