I never managed to find a bad restaurant in Florence, but 4 Leoni stood out for it's fresh ingredients and excellent execution. The service wasn't as enthusiastic as we received at other restaurants, but it was very professional. They don't have an English menu (probably a good sign), so if you don't speak the language you will rely on you waiter even more. We started with antipasta of cured meats and a Tuscan liver spread, yummy! Went with the pear pasta, a variation on one of our favorite dishes, that did not disappoint. Instead of the Steak Florentine, which was huge, we have the filet prepared in the same way. It was the best steak i have ever had. You will notice they will not ask you how you want it cooked. If you don't like rare, eat some chicken. The prices are very reasonable for what you get. Two of us got out for around 100 euro. You'll want reservations (bring your confirmation). You're probably going to want to take a cab, as it is not easy to find.
