Owner description: Our One-Day Cooking Class is informal, fun and hands-on. The class taught in English and designed around a typical Tuscan meal with fresh local in season ingredients. You will start the full day course by meeting the instructor, Shirley Ofria at a café in the historic center of Cortona. Over a typical Tuscan breakfast of cappuccino and pastry, you will choose from our recipe booklet what you want to prepare. After breakfast and menu planning, you will go to the various markets to collect all the necessary ingredients.When you finish with the shopping, it’s off to our home in San Egidio, just ten minutes above the wall surrounding historic Cortona. When you arrive at the house, the aprons go on and the work begins. You will start by making appetizers that will later serve as a light lunch break. After lunch, it’s back to work to start on the first course, second course, side dishes and of course desert. When everything is ready you will sit down to enjoy and critique your creations. The meal can be served inside or out, weather permitting.The course includes; menu planning, shopping, breakfast, lunch, dinner (all food and wine) and the recipe booklet. Dietary restrictions are welcome and if there is something specific you want to do, please contact us several day in advance of your class day.

We had a great time cooking with Shirley! When you sign up for a class with Shirley you get the total experience. It starts with a breakfast meeting at La Saletta. We discussed the menu with our group and what recipes we would like to make but... Shirley encouraged us to do even more. She is very generous with her time and wants you get the most out of your Tuscan cooking experience. Then it's off to the market to buy all the necessities for the meal...
If you have been on a "hustling around" vacation you will be sure to enjoy Chuck and Shirley's peaceful home in the hills where the class is conducted - not to mention the well-equipped kitchen and breathtaking view of Lake Trasimeno.
A class with Shirley is a hands on experience! You really feel like you know how to prepare the recipes once you get home. Be prepared to eat a lot or take a lot of left overs with you! :-)

My partner and I enjoyed a fantastic day with Shirley in Cortona - diagnosing recipes for the day before heading off to the markets to learn about courgette flowers and useful old potatoes. Shirley's knowledge and passion for all things Italian was evident and we found that we learnt more in one day with Shirley than reading a dozen leading books. There is nothing like getting your hands dirty and the variety and difficulty of recipes throughout the day kept us well occupied. We made traditional Italian lemon cake, gnocchi, pici pasta, four cheese ravioli, pork with vin santo sauce, stuffed courgette flowers, foccacia and more! Shirley made the entire day very enjoyable and compared to other cookery courses in Tuscany there is no arguing that Chuck and Shirley provide great value for money. Cortona is a stunning venue and cheap & modest accommodation is available locally at Casa Betania.

We loved the entire experience from start to finish! Shirley helped us plan our menu and we visited several local markets to get all of our ingredients. Chuck and Shirley were the perfect hosts and the view from their home was breathtaking. We prepared a number of Italian dishes including zucchini blossoms stuffed with mozzarella and anchovies, pasta from scratch, an olive oil lemon cake, and tiramasu just to name a few. We lunched on some of our preparations accompanied with great wine and continued cooking throughout the day. Dinner with more wine was great but of course my handmade ravioli was the best! We were a group of 7 so there were lots of hands in the kitchen and Shirley managed to keep us all busy. Thanks Shirley for a fabulous experience. We all loved it!

My husband and I had a great day with Shirley. It was really nice and we learned to do a lot of different Italian dishes. Shirley's house has a beautiful view and it was nice to be in such a calm place. Great experience in Tuscany. Take your time and enjoy the activity, it takes almost 11 hours.

Four of us had a delightful day with Shirley, shopping then cooking and trying to eat over lunch and dinner: foccaccia, stuffed zucchini,pork chops, noodles, fresh tomato sauce, fresh beans, tiramisu,spinach and ricotta gnocchi and more!I highly recommend this day to anyone interested in learning more about Italian cooking and culture...a perfect day!
