My husband's favorite Italian dish is cacio e pepe. He ordered it 7 times during our trip; 4 times in Rome alone. This was his favorite version. Plenty of pepper, fresh sharp cheese, perfectly cooked pasta, and not too wet or too dry. The rissoto was very good but the pasta was the star of the meal.
