We came here on a recommendation from our B&B. When we first arrived, we were disappointed as it appeared to be on a somewhat touristy strip, and it part of a chain of restaurants. They sat us inside as all the outdoor tables were taken. We were non-plussed, that is until we realized that sitting inside gave us a great view of them making the pizzas. These are proper Neapolitan pizzas, cooked in a super-hot wood burning oven for mere seconds, and they come out blistered and crispy-soft, with molten cheese and fresh ingredients. The pizzas we had at this place ended up being the best we had in all of Italy, and we had a few excellent pizzas.
The restaurant was full of locals, sharing large plates of pizza and plenty of the very good house wine. We were greatly amused watching them make the pizza sauce. One man opened up dozens of cans of high-quality San Marzano tomatoes, and another man went around to each can with an immersion blender. The sauce, by the way, was marvellous.
