The place is very nice in a tiny street in the heart of Trieste. It has several table outside which are very well decorated. The wine list is rich and the waiters were very knowledgable about it. Food is good and well presented. Price rather on the high side. Very good for romantic dinner. We were a group of 10 and we all appreciated the evening there.

I can’t read my notes as to what we ate for starters and mains aside from an appetizer of cream of cannellini beans with marinated prawns in crispy salt and reduction of homemade apricot vinegar. Dessert was blueberries in ricotta and a plate of excellent cheeses from a local producer. Lovely meal with a nice bottle of L. Felluga Friulano and very attentive service. This is the place to dine in Trieste. Very inventive menu.

We waxed poetic about the meal, from the amuse bouche to the 2 starters (octopus, scallops.) Then, the pasta with black truffles. Swordfish and tuna mains were well-prepared. We elevated this meal to the best of our week-long trip...& then we waited & waited, finally flagging down a waiter. We had been forgotten for 25-30 minutes, offered no dessert menu nor coffee. We asked for coffee, and it was brought. And then we asked for the check and noted the long delay. "Demania"'s response was insulting: "Sorry, we were too busy". When she brought the bill, we told her sincerely we were really flabbergasted by the experience -- great meal, then passed by. I asked why the table next to us had been given a special chef's sorbet, on a complimentary basis, when we had been offered none. Her response: You should have ordered dessert!" and then: "We were waiting for you to digest." So, there's the review, but fully digested: Wonderful food, but it left a bad taste in our mouths.

Dear Guest,
thank you for the nice words you use to refer to our dishes that you appreciated so much.
Unfortunately you came on a day which was really packed with customers, both inside and outside in the alley.
Indeed, let us apologize again, as we repeatedly did on that occasion, for the misunderstanding: please do believe us this was the case, as welcoming guests with great care is of fundamental importance to us.
So let us just explain that in Italy when customers order coffee without explicitly asking for dessert, we think they have either already had one or don't wish any. The waitress was asked to serve white coffee to your table and so she did.
When you told Damjana about the chef's sorbet on complimentary basis she explained to you that it is given to all guests who order a dessert and she did ask you if you wanted some. Unfortunately, the misunderstanding had made you so annoyed and dissatisfied with our service that you refused to be given any and to listen to our apologies.
We do hope there will be another opportunity for you to come to Trieste and to visit our restaurant again. We are sure you will appreciate not only the quality of our food, but also of our service which is praised by our customers.

Chimera is in the heart of the old Ghetto but it isn't an ethnic restaurant, rather an original and creative establishment with an accent on the several influences Trieste has absorbed in the interesting course of its existence - Mediterranean as well as central European, Middle Eastern as well as alpine traditions are uniquely blended in an exciting menu, well complemented by great wines. Excellent service and cosy ambiance.

Few steps from "Piazza Unita". A nice surprise. Fresh ingredients, excellent fish and seafood, all well prepared and nicely presented. Service simple but good enough.
Go for it.
