On our 5 day visit to Bologna, we visited the Caffé Zamboni twice. The first time for lunch, we tried some of the local pasta dishes and local wine. Excellent service from a friendly, helpful waitress who spoke excellent English and recommend nice food and wine. The Caffé was very busy and we were lucky to get a seat at this very popular eatery in the University area.
Our second visit was to sample the Aperitivo buffet on the Saturday evening. The buffet had a large selection of local food but it was difficult to find a seat. When we found a seat it was inside the caffé and a lot of the patrons were more interested in watching the rather loud football match on the televisions located around the inside of the caffé. Although the food on the buffet was very good and represented good value for money (€8 each including an Aperol Spritz).
I would suggest not going on a Saturday night if you are not interested in football and don't like too much noise in the background.
