We (two couples) only had two nights in Valencia, so every meal had to count! We were referred to Ana by hotel desk clerk who said it was "not touristy, true Valencian paella." One couple ordered the bacalao to start, which was pretty good. Other couple ordered grilled vegetables, which were almost raw (raw eggplant is not good). Each couple ordered a different paella for two. The paella was served table side with a flourish, but that is where the enjoyment ended. The overwhelming "flavor" of the paella was salt. The rice was cooked to the right stage, the seafood was tender, but the dish was just salty, salty, salty -- no taste of the seafood, no taste of anything else. Very disappointing.
