I went there with my friends further to the suggestion of a travel guide… Bad idea. It was supposed to be late lunch that turned into a very very very (!) late lunch as we had to wait something like 30 minutes to get the waiter taking our order.

The food is interesting as the chef reinterpret traditional tapas in a modern way even if some dishes are really weird: i.e. the liquid tortilla is really complicated. Croquetas are good and bombas are exceptionnal.

The deco is brilliant. A mix of modern with traditional peinetas on the wall.

But unfortunately service is so slow and so bad that you can get over this. Waiters keep looking at you without taking your order. Once they realize that you're ready, they managed to forget the pen or something else and keep going back and forth. The only thing they don't forget it's to have a chat with their colleagues at the bar so you can keep waiting a bit more.

“Awesome Sangria”

Sangria here was the best we found during our trip, Iberian pork shoulder was great! Tasted just like a filet. Never had pork that rare before but it was delicious!

“trendy”

Estado Puro Tapas Bar is located across the road from Prado. There’re tables outside, but you’d better enter it, as It looks very trendy: the bar logo – white mantilla comb – decorates the walls and the ceiling. Trendy and sophisticated is also the way tapas are served, on parchment, pieces of wood or slate, in porcelain containers which resemble paper bags, etc. And the food is delicious! We had various tapas: chorizo, egg plants, asparagus, potatoes, cod fish, all were extraordinarily good. Together with Sangria they made a perfect break after a wonderful day in Prado.

“Dreaming of the modern tapas”

A modern spin on tapas but still edible (e.g., no food out of a toothpaste tube or flavored "air"). Russian "salad", drinkable tortilla, and potato cubes all highlights. Wish I went back for more, but there were too many other places to try in Madrid. But none as good as Estado Puro in my book

“OK, but overpriced”

I read about the restaurant and how innovative and imaginative Paco Roncero’s interpretations of tradtional tapas are, but unless we chose wrongly I felt that most dishes were pretty average. We did enjoy the “deconstructed” patatas bravas - baby new potatoes baked, and filled with the spicy sauce, and the mussels cooked almost as a croquette, but the potato/ham croquettes were not worth the Euros 1.95 price tag per piece, nor the foie on toast the 4.95 price tag per (tiny) piece. The asparagus tempura was lovely, but I also kind of hoped that Paco would have done a twist on the Romesco sauce, but no - it was just a normal Romesco.

We enjoyed our meal, but have had better “modern” tapas at Catalina’s in Seville, at much better prices. I also do not like it when restaurants charge more per item for tables outside, which Estado Puro does.
