When travelling I always look for restaurants that are busy - especially with locals. Do Bispo is one of those. In traditional Spanish style you sit at the bar (there are tables as well, with what looked like good service) and order from the many tapas displayed in front of you. At Do Bispo there were dozens, and every few minutes new ones were coming out to replace empty spots from ones that were gone. The food was excellent. Even the house wine was OK (this is Galicia after all not known for the best wines). We did upgrade the wine to a ribeiro Duoro, and a Rioja.

Service was friendly and price was good. The atmosphere is chaos (which it should be in a tapas bar) and noisy. Overall an excellent experience.

We had some tapa dishes which were reasonably tasty. Instead of taking an extra one and thereafter dessert we decided to take a plate of mixed desserts. We urge you not to make the same mistake. The pile of puddings and cakes was not light and airy, some resembled goose liver. One of them must have been bad which resulted in an upset stomach and a day of fasting.
It was busy. We were lucky to have a table, next to the bar so we could attract the waiters attention. But saw some people waiting and waiting and being neglected - probalbly I would have left.

On our first night in town we wandered along Rua do Franco, which admittedly is very touristy but we were too tired to forage further. A Taberna do Bispo stood out like a beacon – whilst other restaurateurs were standing outside their doors looking hopefully for people to enter it was bustling, noisy and busy.
The service was quick and efficient, and as far as time permitted we shared a couple of jokes with our wait staff. Dinner that evening was very good but not outstanding and as the menu didn’t appear in English some of what we had was a bit pot-luck. What brought us back twice more for lunch was the amazing array of pintxos all along the bar. Much of what you see is cooked to order, eg skewers of prawns and calamari, skewers of beef, little pots of mixed seafoods, razor clams etc – the rest is a constantly replenished feast of little pieces of bread or crunchy bread rolls with pates, jamon, all sorts of cheeses, green and red peppers, smoked salmon, mushrooms – the list is as endless as your imagination. Quick turnover, and spotless serving conditions assure you that you are eating fresh, clean food.
The best fun is to get a seat either at the bar, or along the wall opposite the bar, and take in all the different conversations in a babel of languages – and hopefully strike up a few of your own with the interesting people who eat along side you!

busy, crazy, packed atmospheric, great value, clean with a huge choice of tapas and drinks..exactly what you'd expect if you imagined a great Spanish tapas bar.

Very attractive tapas bar, crowded but comfortable.
Service a bit impersonal but considering how busy the restaurant was I would say that is understandable.
The quality of the food is slightly above average, no WOW factor here, even if we see there is a will to modernize the traditional tapas.
In conclusion, give it a try, I will do it again.
