Carçot is a type of scallions milder than an onion and have a length of between 15 and 25 cm. Marinated, they are grilled on the fire to almost burned. You peel the outside skin to uncover the white middle part that you swallow in one piece with a sauce that is made of Tomatoes, hazelnuts or almonds, garlic and red pepper. (*****)
