I should preface what I'm going to say about this corner bar/eatery by saying that my experience in Spain has been one of receiving ordinary service no matter whether bars, restaurants, hairdressers, or whatever. There have been exceptions, but there have been as many bad experiences as there have been good.
The staff in El Gavilán are on the horribly bad end of the service scale. I doubt they've even heard of the word "servicio". Sour-faced, unwelcoming, lazy men who have no place being in the hospitality industry. Signs on tables telling in no uncertain terms that there in no table service, whilst the aforementioned men stand with their arms crossed and nothing to do.
As an old boss of mine was fond of saying: "Take a good long look at this business. Because it won't be here for much longer".
