Patridge - fresh, delicious
Salmon - 'smoked' marinaded in sugar, raw in the middle - but delicate taste, exquisite ; white asparagus warm and cold and sweet: unctious ; rape asado sobre compote de cebolla roja - a revelation, salty and sweet; lomos de pichon (pigeon) asados con patata morada - an outstanding expression of a confident culinary genius; costillas de euskai txerri Maskarada! Chinese flavours perhaps? - faultless cooking; 'Cooked' ice cream - chef at the table: breathless!; chocolate buttons to finish...say no more.....and he is a really cool, friendly guy into the bargain. He spends time with all the guests and exudes charm. A gem of a place!
