“The culinary trip of a lifetime”

My two friends, food service professionals, and I had a goal for years to travel Spain and see the behind the scenes reality of Iberico ham. The challenge is where to start?

By chance we heard of “A Taste of Spain”. With one easy contact, we arranged to travel to Spain on a customized culinary program through Andalusia, including a personal outing to Iberico pig country. We stayed there for ten days, absorbing the culture,
the cuisine, and most importantly, the inner workings of the Iberico ham with farmers and producers. We toured the top name ham curing facilities, sampled their wares, and then ventured on site to two separate Iberico pig farms. We stayed with a family on their farm. We learned and participate in different aspects of their family farming life. They are wonderful people and our friends.

Our dream and expectations were realized by the culinary trip of a lifetime… “A Taste of Spain” put us behind the scenes & into the inner workings of the world of Iberico ham. “A Taste of Spain” designed and coordinated the entire journey for us, and provided an expert local guide who made each stage of the process comprehensible. Every aspect of our trip was precisely what I had hoped for and more. We were in Spain for ten days and did not want to leave our new friends.

Now, whenever planning a return trip to Spain, our first contact is with “A Taste of Spain” – a company that can turn dreams into reality.

A Taste of Spain organised a bespoke range of activities for a group of 10 of us over 5 days - all relating to food covering wine tasting through to ham and olive oil tasting and also a fasinating local villages tour + 1 1/2 day tour of the Al Hambra. They even provided a chef to provide a local foods cookery lesson at our villa. The quality of the guides provided was excellent and the logistics of the activities worked perfectly. As a sampler of their other tours/activities they offer we all agreed that we would like to join some of these in the future and we plan to do so.

Once I tasted Iberico de Bellota ham from Spain, I knew that I wanted to learn all about it. I especially wanted to learn the art of hand carving this Spanish delicacy.

Dozens of YouTube videos and a handful of not very useful books later, it was clear that I needed to go to the source - Spain - to learn first hand about the world of Iberico.

Using google I eventually found "A Taste of Spain" and Miguel Ullibarri. He put together the perfectly balanced Iberico experience: two nights on a pig farm, spending quality time with the farmer and his family; tours of artisanal and very large producers; an evening discussion with a college professor who had done extensive research on a variety of Iberico topics; and a private tutor for a day of ham carving instruction. Lovely hotels, good to great meals, all arranged and made special by Miguel’s expert, but unobtrusive guidance.

If you are interested in specialized food or wine oriented tours in Spain, I can tell you from personal experience that Miguel has shown remarkable skill in organizing, re-organizing on the fly when floods shut off electrical power to intended destinations, and delivering precisely what was requested. It was clear to me, though not ever made visible, that during my trip Miguel was constantly making sure that things went according to plan. And they did.

Over the past decades my wife and I have had the good fortune to travel to the far reaches of the planet - Madagascar, Mongolia, Timbuktu (really), as well as cooking school in Florence, and to Alba for opening day of the white truffle festival. We have had good trips, and not so good trips. If you have a guide, you really want someone who is both an expert on the subject matter, and an expert at organizing and making things happen. That combination is hard to find. Miguel Ullibarri is both.

A Taste of Spain with Miguel Ullibarri – highly recommended.
