I used the word responsible because the food is of a high quality and is prepared without additives or preservatives, the produce is local, and the meat is either wild or from farms that emphasize animal welfare. We've been here twice and it is one of our favorite restaurants. It is definitely pricey, but well worth it for a special occasion. This trip we enjoyed: pork rouladen with roasted beets and mushroom schupfnudeln (local specialty, although I've never had them with mushrooms in them-tasty!), wild boar sauerbraten with walnut spätzle (another local specialty with a delicious twist), seasonal pumpkin risotto, and roast beef (rostbraten) with spätzle. The food was served quickly and was enjoyed quickly :)
