There she is, a caricature of a French matron, alternatively rude or ignoring you while you wait forever on line, when what she's really doing is stalling for time while her confederate wheels another plaque of socca down from her shop just off the Place Rossetti. Then she throws it over coals in a 55-gallon drum to reheat it, tossing oil over it - sounds awful but it's the right thing to do with socca. The socca is very good, but not, in my opinion worth the wait. Getting insulted by her is, though, so check it out. I tried, btw, to go directly to the source, but her husband, who sells kitschy art from in front of their bakery, says it all goes to Theresa in the market. Today i got there just as she was getting underway and so I stepped in and was the first to order socca and the third to actually receive some. She also sells pizza, pissaladiere and pan bagnat, but why bother? Do have socca when in Nice, and do check out Theresa, but you don't have to do both together.
