Had the pleasure of dining at A Table on a Friday evening in late September. Very quiet in Frejus. Our waiter was very friendly and the chef was very willing to answer all our questions. It was a slow night, so we had ample opportunity to chat. The house started us off with a small bowl of local olives that were marinated in olive oil and rosemary and of course bread. We then had the escargot appetizer which we shared, six each. After having the same in Paris several days ago, we expected the same quality. Wow, were we pleasantly surprised. The snails were much more tender than what we had experienced in Paris and of course the garlic butter sauce just had to be sopped up with the bread. The chef said that he gets his escargot from a local supplier. For our entrees my wife ordered the beef tartare and I, the bass in court bullion with a creole sauce, ( one of the specials). The beef was perfection! Seasoned just right and the texture was spot on. Once again, just having had the dish in Paris, this was a huge step up. The bass was cooked ideally, the bullion was flavorful, but not overbearing and the creole was just spicy enough to round out the dish. Tres Bon! The chef brought out a sample, 2, of his other special of the night, mussels with a light cream sauce which were to die for. We finished the meal with a fig confit and goat cheese sampler. A nice Cotes du Rhone accompanied our meal. The prices were reasonable, service great, wine list was short but reasonably priced. A perfect end to our trip to France.
