With a view on the Place du Capitole and exquisite dishes from one of France's best chefs, this restaurant is currently my favorite place to eat in Toulouse. Order anything off the menu -- it will make you forget all other versions of the same dish. Chef Constant takes traditional dishes and somehow gives them new life. I've tried the foie gras-topped hamburger and fries, the Caesar salad ("just like I made it for the Ritz"), steak tartare, fricaseed squid, shoulder of lamb... And I plan to go back. My favorite dessert: waffles with salted-butter caramel. To top it off, the vaulted ceilings of this listed building are covered in frescos and the decor in gilded sconces. It makes you feel like it's much more than a brasserie. And it is.
