not a very south of France cuisine, but still very good.
very nice staff, good wines.
in the menu (8courses) 2times poched eggs, 2 times agrume, 2times aspargus. special style

This is well deserving of its 2 michelin stars.
We had the emotion menu at 72 euros,total bill 265 euros well worth the money, every course was mind blowing along with all the extra little touches and beautiful wine this is by far the best restaurant I've been in. The staff were absolutely amazing so professional and unassuming.This experience made my birthday treat to France unforgettable.

The restaurant offers an excellent and very reasonably priced lunch menu - around 35 EURO's - with 3 courses plus nice "greetings from the kitchen" to start with. Friendly service and a lovely terrace to enjoy your meal outside on a sunny day.

Le Parc has long been a brilliant restaurant, modern French cooking, very precise; although the food is beautifully presented, the star of the show is the taste
Now, the restaurant has added an hotel block, half a dozen rooms, in modern style; high quality fittings, large comfortable bed; sadly, we could not use the balcony - but the hotel is not responsible for the heavy rain and the ferocious wind
We had the seven course tasting menu, every course delightful, and a glass of wine for every two courses; we had the same dishes, except for one course, when I had a wonderfully elegant raw oyster on top of beef tartare, my wife had a terrine of foie gras above and below fresh raw tuna - both superb; the menu was liberally laced with sliced black truffle, the main course - 7-hour cooked veal shin - interlacing the truffle with wild mushrooms; the fish courses - one a gratin of sea urchin and scallops, the other a gorgeous steamed sea-bass - were delicate, and full of flavour. The staff were knowledgeable, very charming, extremely professional
The wines were all from south of Carcassonne, all good, all well chosen and well explained
After an excellent night's sleep, the continental breakfast was the best I've ever had, everything maade in the restaurant, including the jam and the vanilla butter
This is an expensive treat, but well worth it; we had a brilliant gastronomic evening, and everything was perfect (it is, however, possible to enjoy the same standard of cooking by trying the daily lunch special, also superb); a great place for a blow-out

Had a very nice meal. Ordered the tasting menu with wine compliment. They really didn't know how to handle that and poured four wines over eight courses. When we asked the maitre d' he said we would get drunk if we had a different wine with each course, but they did pour us eight glasses. Kind of forgot to explain the cheese cart, which was substantial, about 50 different types. The rest of the staff was nice. The busboy actually explain bottle of wine for us with passion and poetry, and was very pleasant. Room at hotel was modern and nicely appointed.
