Hi I recently stayed at a wonderful B&B in Carcasonne, its called La Maison Vieille and is situated about a 5min walk (uphill) from the castle. Catherine the owner speaks perfect English and is very approachable, her mother Francoise prepares the breakfast and it is really nice, lots of cakes, creme brulee, rice pudding and home made jams all washed down with fresh coffee. There is a lovely sandwich shop just over the road that also sells cakes and wine, take my advice and buy most of your food from here as every restaurant we tried was pretty poor. I like to try local foods and tried a beef daube (15 euro), had to leave half of it as the meat was so fatty, most of the other eateries seem to cater for the tourist ie pizza, spag bol and steak and fries all of which were quite pricey. Do not go to the arab market as it really is full of tat, however the french market in the square is brilliant for fresh produce of all kinds. So to sum up B&B great, castle great, friendly natives great, only 10 mins from Carcasonne airport ( fly Ryanair) take a taxi its nearly as cheap as the bus and a lot quicker, give the restaurants a miss.
