Service was impeccable. Offered a choice of table made very welcome and given lots of help understanding the menu. The wine list was also very good with lots of local choices and we were given great help in making our choice which was an excellent local Viogner.
All the food was very good. We had the Marinaded Salmon with wild fennel, Monkfish with Seafood Sauce, and Cassoulet. The cheeseboard was a trolley - all in good condition - and the Desserts were also great.
The building itself is very old and full of character. Just a lovely place to eat great food and feel pampered by the service.

Fabulous Michelin standard food, but at considerably less cost. Superb food, lovely wine and excellent, efficient and friendly service in a lovely setting. Definitely worth a visit ! Highly recommended!

The atmosphere and service are unparalleled - this is a fairly bold yet accurate way of putting it. The food is always excellent, often complex but there are always simple dishes to fall back on if you are not in the mood for nouveau cuisine. Regulars on the menu such as pigeon you can seldom go wrong with.

However, not to knock the restaurant at all, but the real reason anyone should visit this restaurant is to eventually visit the hotel itself. The staff poolside, in the restaurant and on the concierge are impeccably dressed and very personable.

I have been going to this hotel and restaurant for over 25 years and can honestly say that the standards have never slipped.

Our first night in Carcassonne and we decided to stay local and try the lovely place. Rustic, shabby chic and full of charm. The food was amazing. Fresh, hot, super tasty and served by the most attentive staff. Great value for money and will definitely be going again. The waitresses were always keeping an eye on our glasses and made sure they were always full. A perfect evening...apart from forgetting the code to unlock the hotel door. Fortunately, the waitress @ Chateau St Martin came to our rescue again and got it from another diner.

Tonight we ate a fantastic meal at this restaurant, perhaps one of the best fish dishes I have ever eaten and wonderful deserts of apricot and chocolate. Unfortunately our experience was spoilt by half a dozen flies which persistently irritated my husband who, in turn, irritated me! All in all we felt that this restaurant has huge potential with great food in a fabulous setting. But it was very quiet despite being late July (just 7 customers all evening) which meant that the service was good but the atmosphere lacking.
