Olivia Gotti first took us to the town of Mirepoix for market day. Then off we went to climb Montségur to see a Cathar Castle Ruin. It was a rainy, foggy day and never having hiked up a mountain, it took me longer than expected. Due to time and bad weather, after lunch Olivia arranged a wonderful wine tour to Domaine Saint Martin Winery, where the owner let us taste the wine each step in the process. Olivia is very well informed tour guide. We really enjoyed the day.

We had a superb day with Olivia Gotti today who runs this company. We are staying at Carcassonne and wanted to visit some of the other Cathar sites and surrounding areas. Olivia picked us up from the hotel and drove us in a very comfortable vehicle to both these castles and lunch. She was very knowledgable, great fun and extremely helpful. She does tours to many other places around here too and we would highly recommend her. We had a great tour. Thank you Olivia.

We contacted Olivia well in advance of our planned stay in Carcassonne and were quickly able to arrange to spend one of our seven days there becoming familiar with the wine culture of the area, which was completely new to us (for the most part, the small producers that we had the privilege of meeting through Olivia distribute only in Europe). We had arranged that Olivia, who is the proprietor of this business, would pick us up at 10 AM at our B&B in Carcassonne, and she appeared promptly as scheduled. What followed was a day of remarkable discoveries as we visited three very different producers of regional wines. We did not merely taste the wines: we observed the process and walked the vineyards with the owners and Olivia, who served as translator (my French is very limited and my husband does not speak French). The experience of meeting these proprietors would have been completely impossible in any other way. Each of the vineyards we visited had its specialty: the local sparkling wine (which predates Champagne) Blanquette de Limoux at the first winery, organic agricultural practice at the second, and a longstanding family history of vinification at the third. In between the first and second wineries, Olivia took us to a wonderful traditional French restaurant in a very small village and made sure we were comfortable there before leaving us to enjoy a very French two-hour lunch. She also shared freely her knowledge of the region as well as the wines and made many suggestions for other villages and areas in the region that we might want to visit. We took advantage of her recommendations to make changes to our plans, very much for the better. We cannot recommend highly enough Olivia's expertise and ability to translate the local culture and history of the Languedoc for English-speaking visitors. She immeasurably enriched our experience of the area.
