On the recommendation of Meg Zimbeck (parisbymouth.com), we went to Severo for steak frites. The beef was first rate. Service was fine. It is, like many, quite small, so the tables were fairly close together. That said, if you want top-notch beef, this is the place to go.

Tiny restaurant with nice meat, good wine list and atmosphere. To be recommended if you fancy good meat and wine. I would like to come back!!

We had read Le Severo served up renowned steak frites, and we were not disspointed! While it is a short taxi cab from central Paris, dinning in the cozy and authentic restaurant with the locals was worth the trip. Our server was great, translating the menu and ensuring we enjoyed our meals. The fries came out hot, and being double fried were some of the tastiest we've ever had. Be sure to book a reservation as they are often booked for the evenings. They are also closed on Saturdays and Sundays.

When I travel from Houston, I do not want a Houston experience. We have outstanding steak restaurants; I wanted a Paris experience, and that is what we had. Very little English, menu all in French, and the owner (butcher and chef) can obviously be a bit standoffish, because he speaks NO ENGLISH. But, we had a wonderful, wonderful time! We had the sauteed pig's foot (no joke), and on their wonderful bread, it was like putting butter with bacon crisps on it...the blood sausage (I would normally never touch the stuff) which was crispy and one of the top 17 things I've ever put in my mouth. The cote de boeuf is a bone in ribeye for two that is written on their chalkboard with saignante (rare, but not raw) underlined twice! This steak is aged close to 10 weeks and it was outstanding! And by the end of the evening we were best friends with the owner! This was one of the highlights of our trip. Oh, and the wine list is extensive, ridiculously cheap for what you get; we had a 1995 st. julian bordeaux that was less than 90 euros, and they had tons of wines which were between 30-40 euros. The bad reviews I believe are partly correct, but do not go there if you want a Houston steak, go there if you want a wonderful Parisian evening.

We headed to Le Servero recommended as a great place to have meat....
One of the people in our group wanted his meat well done, they refused to do it. fare enough, you have your standards, we order some appetizer for him. Imagine our surprise when our medium/rare meat arrived to the table completely cooked!
After some discussion, they admited the meat was not medium/rare, but they refused to do anything about it... we ended up paying a lot, and with no dinner...
The meat that did come medium/rare was actually fine. Certainly not fantastic enough to justify the snobishness.
Some asswholeness is expected from the French. Even curious, But this place really goes the extra mile on this dimension.
