We had thought we found our favorite a few times, first with Baillardran and most recently - and most surprisingly - with the ubiquitous Paul...but then we stumbled upon Lemoine in St. Emilion on Christmas day and realized we had found our dream canalés. Why are these so exceptional? A combination of factors: It´s not just the textures, but the quality of the textures...The exterior is satisfyingly firm with just the right amount of brulée...Biting through the chewy exterior to reveal the soft, almost creamy interior of the canalé and a divine moment of canalé rapture...Will last 5 days - not longer - from the day they are made and do not refrigerate, as per the Lemoine sales dominatrix.

I had read about Lemoine before our trip to Paris and it was on my list of "must eats". I must say we were not disappointed. Rue St. Dom is fairly bustly full of shops etc. And Lemoine is a bakery on a street corner and you can't help but be drawn into the little pastry haven. The caneles are naturally what you would have here - they are baked fresh everyday. There's lots of chopped up ones to 'taste' before you buy and I must admit my husband did go a bit mad much to the shop lady's amusement.
They do different sizes - we bought a pack of 6 small ones and she advised us on how to store them (outside the fridge). They do have a variety of macroons as well, but I saved Laduree for that! We also couldn't resist the nutty nougat and got a few chunks of those - which have kept well (outside the fridge) - and they're still going - little sweet reminders of our lovely trip to Paris.

This Parisian hidden treasure was located near where we were staying in Paris. After admiring the chocolates in the window every time we passed we finally went in on our last day in the city. It was a good thing we did as it was a great store with friendly staff. The chocolate, macaroons and canelés I bought from this store were delicious.
