We had thought we found our favorite a few times, first with Baillardran and most recently - and most surprisingly - with the ubiquitous Paul...but then we stumbled upon Lemoine in St. Emilion on Christmas day and realized we had found our dream canalés. Why are these so exceptional? A combination of factors: It´s not just the textures, but the quality of the textures...The exterior is satisfyingly firm with just the right amount of brulée...Biting through the chewy exterior to reveal the soft, almost creamy interior of the canalé and a divine moment of canalé rapture...Will last 5 days - not longer - from the day they are made and do not refrigerate, as per the Lemoine sales dominatrix.
