Description: Alexandre Bourdas has adopted the pascade, a thick crêpe from the farms of the Rouerge. He has revised the recipe to obtain a crisp, tender and delicate texture, and fills it with flavour combinations drawn from his culinary experience. At the end of November 2012, his cantine- auberge dedicated to this rustic dish opened in the centre of Paris.
