On my search for an alsacien restaurant in Paris I ended up in Flam's which features five locations in Paris and several in the périphérie of the country. You can choose à la carte or one of the excellent multi-course meals ($15-23). The wait staff was fairly young and unfortunately not very experienced (e.g. the apéritif was served after the first course was finished). The nice thing is that if you take the formule menu, you get all you can eat tarte flambée (à volonté). Whenever you are done with one, the waitress is prepared to bring you another one (or a different style). For as little as 65¢ you can upgrade your apéritif or dessert to a choice with liquor. They serve free tap water on request and have some good and affordable wines from the Alsace. Tarte flambée does not stay hot very long. I therefore appreciate that they serve one after the other fresh out of the oven. I was very happy with the food and the bill, but not so happy with the service and their opening hours (they are closed 3:00 - 6:30 PM and only accept groups on Monday evenings). Overall a good experience. I will certainly look for a Flam's sign on my next visit to France.
