This a difficult restaurant to review.... Because it is not really a restaurant. It is a modern looking wine bar with a limited menu but some amazing dishes. The hot dishes are limited to some pasta and some risotto but the scallop risotto was shockingly good. 4 or 5 small scallops on a very flavorful risotto in a small casserole. My husband and I rarely order the same dish but I am glad we did tonight. Then we had a dark chocolate gateau with Creme dAnglais. In the States we would call this lava cake. It was so good I wanted to lick the plate and may return here tomorrow after dinner just for the dessert. ( and I don't usually even eat dessert).

With great food, good service and a nicely-selected wine list, Tout Simplement offers authentic flavours with a modern twist. It seems to be popular with Troyes residents: make a reservation, or eat early--it seems to be full every evening.

We decided to eat here as it was number one on Tripadvisor, it was close to our hotel and it was -8 and snowing and way too cold to explore, also it was the only place on the strip of restaurants which had any tables occupied - strange for 8pm on a Friday night. The menu is odd, we were in the mood for French bistro style food, steak frites etc. This is not that kind of place, steak tartare seems to be a specialty as to tartins which are like big toasted sandwiches. The food is tasty enough, but not very special, maybe better for a quick lunch rather than a romantic dinner. The decor is very modern with high tables and stools upstairs and low tables and (not very comfortable) sofas downstairs. I find it hard to believe that this is the best that Troyes has to offer.

An excellent restaurant. Deserves to be number one on trip advisor in Troyes. The food is quirky and original . The wine list is iinteresting and all locally sourced. By no means expensive and good value for money. Highly recommended.

If this is the best restaurant in Troyes - as it was when we visited - then you are probably better off just trying to eat in another city.

There are basically 3 main items on the menu, each of them available in about six different flavours:
1. Rillettes (paté), served with bread
2. 'Crunchies' (essentially a large piece of tasty toast with a topping) served with salad
3. Steak tartare (raw mince meat, to the uninitiated).

There's nothing wrong with any of these, but as the basis of an entire menu it is all a bit, well, quirky. They are all fairly specialist items. We had a table in the basement, where if I was being polite I would say the decor was 'inspired by' the 1980s. The atmosphere was pleasant enough and the waiter was friendly even if he smelt as if he had spent the afternoon rolling around in an ashtray, packed his socks with old cigarette butts before starting his shift, then given himself a spray with Eau de Tabac before serving us.

There's nothing actually *wrong* with this place - if you ended up there for a snack lunch you'd probably be happy enough - but it's very hard to believe that this really is the best place to go for dinner in the whole city.
