We stayed in Amboise for four days. Our hotel directed us towards the chateau for eating out which was very busy and relatively expensive. After our first night, we discovered La Pause du Temps and ate there every night and a couple of lunches too.
The young team are really lovely and take pride in the quality and service they offer. The daily menu was 3 choices for each of three courses, so decision making was much easier than full a la carte menu. Usually the choice was meat, fish and vegetarian per course. Their vegetarian choices were absolutely top class. (See the attached pics)
When the weather allows, you can sit outside in the street, or in air-conditioned inside if you prefer.
Highly recommended.

Monday sees many of main restaurants closed in a busy Amboise - recommended to this bistro by another local bistro
Limited menu from a newcomer but good food we cooked and priced around €25 euros : courses - limited local wine list but spot on Bougeil Red with our Steak and Chips
We had a lovely dinner - try this and others shooting up the ranks on trip advisor

Delightful small place away from the tourists who were thronging Amboise during our visit. The presence of brass bands in the town made it difficult to find a restaurant with a table for the four of us - we were lucky to stumble on La Pause du Temps where we just got in in time. Good French food, well cooked and a rather nice bottle of a wine from Gascony. About Average prices and a little rustic inside but nevertheless we all enjoyed the experience.

Good music playing, not obtrusive, even though the speakers we just above my head. Waitress very helpful. She dealt with a customer, who had many questions and changes, very well.
Food was OK: beans cooked, sausage and meats added later, perhaps? Good wine list. I didn't have a pudding. There were three choices: cassoulet, a fish dish, and vegetarian.
Amboise is a tourist town and this is 200 metres from the castle, so is cheaper than the 'pizza palaces' but compared with food elsewhere it was not cheap.

Among French tourists, we were lucky to stumble upon this lovely little restaurant (about 6 tables, plus some outdoor tables) which is located a little further down the road from the throngs of tourists closer to the chateau. The décor is funky and quaint, not corporate. The menu items are written on a large chalk board that the waitress brings near your table to facilitate viewing. They offer food prepared in a french style, but with different ethnic twists compared to traditional fare, and it was nice to have the change. The two of us each chose a two course meal. Between us, we had starters of lentil soup and salad, then mains of fish with vegetables, and a vegetarian stew over couscous (Moroccan style). All was delicious, very fresh tasting, perfectly cooked and seasoned, and served with care. We didn't try any of the homemade frozen yogurts this time (too full!) but will do so on our next visit.

The woman who helped us seemed to know a lot about the wine, and based on what we were interested in, she recommended a locally produced rouge, actually one made by a local wine school. It was excellent, and matched perfectly with what we we'd asked for, evidence that she had listened patiently to us. Outstanding service!

I'm guessing that the small menu changes regularly with the seasons, and we can't wait to go back.
