Just had lunch at "Au 3 Vauban". I was told this restaurant was new and exciting for Dijon. Well its six months old, so not exactly brand new. However they have spent some money on this place. The inside is beautiful, spotless and some of the most comfortable chairs i have ever sat on in a restaurant. We went for the four courses with matching glasses of wine. Here goes. The amuse bouche was Gazpacho, which is almost a cliché now in France. It wasn't the best i have had but a nice start. First course was a tartare of Scallops with crab salad. Was lovely and quite generous. The Main course was Charolais beef with Pomme Puree and Mushroom Duxcelles. The beef was excellent as you would expect from this part of the world. Dessert was strawberries done three ways, ice-cream, salad and a almost smoothy like concoction. It was good but not great. Though to be fair, i am not a dessert person.

It is the choice of the chef when ordering like this which may turn some people off. They ask if you have any allergies which is great. However nothing is more exciting than choice, it was the only negative.
