Not as interesting as some of these trains in France primarily because Beaune is really about one thing, wine. And most of that is hidden behind the walled courtyards of very famous merchants who tend not to need the visitors. The city is pleasant enough but has limited interest beyond the cathedral, the Hotel Dieu and the ramparts. It is a useful way to get a feel for the city which is quite small and very walkable.
