Maison Adam has been around since the 17th Century. Back then the kind of macarons they made were these almond ones and even supplied them for the wedding of the Sun King, Louis the XIV to Maria Theresa. That was how famous they were even then. So when in Biarritz or St Jean de Luz, one must at least try one of their original recipe, authentic almond macarons. They are made fresh daily and are beautifully soft and chewy, and not overly sweet either. You can buy them in a pack or in a tin but if you just wanted to try it, you could just buy the one for a Euro each.
