We booked this weekend away as a last minute trip, after reading the last two reviews we were a bit apprehensive but I'm glad in the end we decided to go. All the staff in all departments including the owners showed us great hospitality and warmth and nothing was too much trouble, the hotel has only been open as The Chester Hotel a few weeks and I'm sure they've had teething problems which is expected, and you have to remember some of the staff have never worked in the industry before so give them a break. Some of the staff were at Simpsons and it's nice to see some familiar faces, and Chris Quinn-Waugh as the General Manager is doing a great job at leading all the staff and moulding them into a great team.

I love the new bar, it's smaller than the old one at Simpsons but there are booths, so you have a choice of where to sit, for the 2 days we were there it was busy so they must be doing something right, i love the new cocktails menu, if the cocktail you want isn't on the menu then i'm sure they can make it for you and if you don't like cocktails there is a wide selection of local brews that can please any palate.

The new restaurant looks fab we had a table that overlooks the new kitchen where you can watch the chefs prepare your dinner. The menu is mainly fish or meat, it's all seasonal local produce and always tastes and looks fantastic, I can highly recommend the banana souffle for dessert it comes with a chocolate/toffee sauce and icecream that just oozes over the souffle for someone that hates eggs my partner ate most of it both days.

The new rooms are newly decorated to a high standard, we had room 3 that overlooks the old car park at the back, the only problem that came up was that we could hear people above us walking about.

We will be back when The Chester Hotel and I can recommend the food, bar and hotel to anybody

I've been a regular visitor to this hotel, when it was Simpson's, over the last 10 years and very much looked forward to seeing the changes after being closed for renovation but, sadly, all of our party left wondering whether we'd go back.

When I called to see if they took reservations for a bar lunch (we expected the place to be booked out) I was told no but I could book a booth - with a £100 deposit!! We decided to chance it and turn up early for lunch, hopefully get a booth and see why on earth management felt they could justify asking for a deposit at lunchtime - well, at anytime really.

We turned up at noon and saw 2 tables in the bar were occupied, and all booths empty. We were asked if we'd like to sit in the bar or in a booth so, eager to see what could be so special about it, that warranted a deposit, it was a booth for us and we sat down chuffed and started looking over the menu which showed the first two segments "served after 5pm". What's that about? Can't the kitchen do mini bites at anytime - too much trouble or not enough revenue?

The booth was not what was expected at all. We felt quite hemmed in - and certainly forgotten about by the staff - and with a mini tv on the wall it reminded us more of a hotdog/hamburger joint in the States.

The wine was lovely, perfectly chilled, but the salads very all disappointing and at £16 for a Caesar with a couple of extremely thin tasteless pieces of chicken, one of which turned out to be skin only, excessively priced for a bar. I don't mind paying the price if the quality is there but there was no quality on any of our plates. Freshly char grilled breast would have been so much tastier rather than what looked like slices from a pack purchased from a supermarket.

I left feeling rather sorry that Simpson's/The Chester has taken, in my opinion, such a dive. I realise the need for redecoration/remodelling but to apparently think themselves so fantastic they request a deposit to book a bar table is crazy. Plus, serving the quality of food we had today really only makes us go elsewhere next week.

To justify the message they're sending The Chester really do need to be the best in Aberdeen with clients lining up - but from what we saw today this certainly was not the case. The saying "a restaurant is only as good as it's last meal" should be mentioned to the kitchen and maybe loose the request of a deposit for a booth....it's almost laughable.

Of course our team is disappointed to read your comments but after two weeks of opening, we continue to welcome feedback so we can immediately work to rectify these challenges that you have encountered. We will experience like every new opening some challenges and fervently hope that your immediate judgement on our product will not be lasting but to give us the opportunity to return and enjoy what we are striving tirelessly to achieve. Fed up of restaurants opening in Aberdeen and feel they can rip us off , the prices are over the top A fillet steak in a well know hotel that is closing down is £25 and includes sides Chesters is charging £4 extra for each side so instead of going to Simpsons most weeks for dinner Chesters might be a one off out of nosieness Why when u go to Glasgow or Edinburgh the prices are so reasonable not everyone in Aberdeen are on business expenses or in the oil but i will say it looked nice but we had one drink then went to the Dutch Mill for food

Thank you very much for your feedback on your experience in reference to our prices.

Our Executive Head Chef and his team has carefully chosen quality foods to prepare and everything is freshly served. To maintain the quality we are wanting to achieve, it is unfortunate that our prices will reflect this. We are not wanting to be known in anyway as a "rip off" where our prices are concerned and we are delivering the best meats and fresh produce locally.

Hopefully, if you did give us the opportunity to sample our menu, you will recognise the personal care of preparation that goes in to every dish.

We welcome you to return and enjoy a meal with us.

Yours Sincerely

I can only comment on our restaurant and bar experience this evening. While we had high hopes and expectations we were let down. We entered the bar at approximately 6:30 pm to a buzzy atmosphere but it quickly became evident the bar staff was a bit overwhelmed and confused. I asked if it would be OK to take recently vacated table. The waiter it was no problem and he would be back to clean the table as it was wet and sticky. The server took the drink glasses but never returned to clean the table.

We had a 7:00 pm reservation in the restaurant and when we arrived our reservation could not be found. The hostess managed this very well and we were quickly seated. The staff attempted to be very conscientious but things did not jell. While everyone looks busy, the attention to detail is lacking. Once our order was placed, the bread server presented our bread options it was several minutes later that it was realised we had not been served butter. The bread options are limited and the olive focaccia lacked flavor.

The white wine we ordered required further chilling before drinking. Once chilled it was very good.

Our starters of oysters and scallops were prepared very well and the flavour was exceptional. On to our mains of halibut and cod. The halibut was prepared and presented beautifully. The taste and spicing were very nice. The cod while prepared very well lacked seasoning. The accompanying ox cheek was wonderfully prepared and seasoned. The fritter of monk fish check was not prepared well and was ‘rubbery’.

The presentation on silver platter and white gloves is over the top. The seating area near the wine cellar is stark and not welcoming or warm in its design and layout.

The bright lights in both the bar and the restaurant does not make it welcoming or comfortable for a quiet evening out.

I know this is the first week the restaurant has been opened, I would have expected an experienced hotelier such as the Chester would have been able to present itself in a much better presentation.

While I wish the Chester success, the opinions on TripAdvisor will have to be outstanding before I would make a return visit. As a local, I had hoped for more and look forward to improved performance in the future.

Thank you for your feedback!

I remembered you well and you did express your concerns on the evening just before you left. I did promise to investigate why we did not have your reservations and unfortunately the Receptionist who spoke to you did put it in the new system but human error did not seemed to have saved it.

You came during the first week of opening of a brand new product, with new computerised systems put in place and even though this is absolutely no excuse, we have not had a repetition of these issues.

Trip Advisor is a great way for feedback and I thank you for the positive review on the quality of our food. Your honesty of your evening was reflected and we will continue to take on board these comments so that we can only get stronger as we identify our challenges and work to prevent them occurring.

Once again, thank you for being one of the first guests to visit us during our opening week!

We look forward to welcoming you again in the near future and hopefully restore your faith in our product.

Kindest Regards

We held our wedding reception at the Chester on February 22nd prior to the hotels official opening. We won't lie and say we were not just a little bit worried as the date approached and the hotel seemed far from completion but we need not have worried as the staff pulled out all the stops to ensure that not only was the venue ready for us but that it looked stunning . The hotel rooms have been refurbished to a very high standard and all our guests enjoyed their stay. Breakfast was first class too.
But to get back to the reception itself , the restaurant was decorated beautifully with lots of attention to detail. The quality and presentation of the food was fantastic right down to the delicious canapés served at the drinks reception. The bar staff too were very knowledgable and served an amazing array of drinks. The staff we have to give the highest praise to. They did a great job and could not do enough for us and all our guests. All in all the Chester did a first class job and we have no doubt it will be an amazing success in Aberdeen. Their secret we think is in having a very capable management team and this means that even the small details are taken care of and that is what is important to their clientele. We will definitely be back!!

My new wife and I have just experienced a truly amazing time at the Chester hotel. We got married 28th February in this wonderful new hotel with truly awesome staff. The rooms are outstanding and the overall atmosphere in the hotel is tranquil and calm. The staff are extremely attentive and can't do enough to assist. The food is first class and the sheer quality of the hotel has to be experienced. All of this staff culture and class comes straight from the owners themselves who are very hands-on and the General Manager, Chris Quinn-Waugh simply is the best host we have ever experienced. Thanks for making our dream day become a reality.

My wife and I were privileged to attend a wedding reception at this lovely hotel on the 22nd February. Even though the hotel is not finished being refurbished I have to say how impressed we were by the look of the hotel, the attention to detail, and the excellent level of service.

We arrived at the hotel in the evening and it is beautifully and distinctively lit, with it's own car park, although there is also on street car parking in the area. The atmosphere was warm, sumptuous and welcoming.

What marked the hotel worthy of it's high rating was the pro-active attitude of the staff. When I mentioned to one of the staff team that I wasn't drinking as I was driving they ensured that I was given non-alcoholic drinks but presented me small samples of the various wines served that evening which was a treat, and allows me to say they were excellent.

No request was neglected and the staff were keen to make sure that we had everything we needed and wished for. We were served by eight waiting staff at a time ensuring that groups were served together which is something I haven't experienced outside a luxury cruise but greatly applaud.

We wish the staff team and management every success with the Chester Hotel and look forward to returning when visiting Aberdeen.
