Description: GB1’s philosophy is quality with simplicity. The 2 AA Rosette restaurant offers a fantastic choice of the finest and freshly caught seafood from Brighton’s shores. Executive Chef Alan White's brigade of passionate and inventive chefs add a contemporary touch to classic British cuisine and seafood favourites. Standout menu items include sea bass with suckling pig chorizo, and the king prawn pan-roasted fruits de mer platter, while new seasons additions include wonderful twists on retro classics such as the rhubarb almond cake with burnt apple puree. The seasonally changing menu also boasts meats from the grill namely the delectable Aberdeen Black rib-eye steak, classic Sussex favourites and vegetarian dishes. GB1's contemporary vibe plays sensitively to the hotel's historic character and Regency architecture, boasting wonderful features such as the striking central fish bar built around the existing columns and central ornate chandelier.

A real taste experience. Tremendous :-)

Grilled mackerel, off the bone, was delicious. All the seafood is landed locally and generally consumed within 24 hours. Perfect.

18th birthday celebration ... And GB1 were superb. We were a large a group, and Michael was looking after us. He offered sage advice with menu choices, offered sampling of wine to go with the meal, and his recommendations were spot on. He encouraged people to view the menu almost as a suggestion, and if we had particular dietary requirements, the chef would be more than happy to amend anything .. No dramas .. All dine with a smile. Half a portion for children? Not a problem.
The setting was relaxed, and elegant with a modern twist.
With 9 of us eating, we gave the menu a good run for its choices,
Starters ... The scallops were sublime, prawns finger licking good (yes I know we had a bowl for that) and the main courses were excellent.
The hardest part was deciding what to go for ... Under. Michael's suggestion I went for the Sea Bream with hollandaise sauce, garlic green beans and chips. It was quite simply, the best I have ever had. The fish was moist, flavoursome and very meaty, so several down the table got to try it, all agreeing it was the best they had had.
The downside? Absolutely, could not, find room to even slip in a pudding. That didn't stop GB1 whisking out a superb pannacota and spun sugar dessert plate for the birthday girl with chocolate writing piped round the plate.
Service was excellent, attentive without being intrusive. Compliments to the chef for producing not one single bad dish between nine of us, for serving staff remaining charming and polite and not looking tired or stressed on what it their busiest season, and to Michael for being so terribly good at what he does, and for making even the youngest in our group (15) feel grown up.
Can highly recommend GB1 for a special occasion, a business lunch where you want to guarantee a good meal, a romantic place (they will put you in the conservatory under twinkling lights), a large group (everything is modular and seating can be moved round to suit) - but my favourite ... Just nipping back for dinner with friends.
Thank you very much. Superb.

My daughter and I went here for an early dinner before going to a show. The first thing to impress us were the excellent welcoming and friendly staff. The menu choices where superb and our waiter took time to explain the whole menu to us. As the name suggests fish features heavily on the menu but there were some meat choices too. Our starters of Whitebait and Crab were perfect and beautifully presented. Mains of cod and monkfish were also excellent. The cheese board was to die for. Service was first class. The only down side was the wine list which we thought was a little overpriced but we are happy to forgive as every thing else was perfect!

At last the gorgeous Old Dame, The Grand has an exquisite dining experience in the GB1! This restaurant is the whole package, an elegant and glamorous setting, delicious high quality, perfectly executed menu and friendly, efficient knowledgeable staff. We had a fabulous evening tonight perched up at the stunning champagne bar - so decadent. Our knowledgeable waiter guided us through both the wine and oyster menu, assisting me with the perfect pairings. Our fish was absolutely delicious, cooked perfectly and served with creative flair. Having enjoyed the bracing sea air along the sea front situated across the road, what could be nicer after a long soak in a steaming hot bath, than to slip into a gorgeous dress and be utterly spoiled by the wonderful team at GB1 - thank you - YOU ROCK!

The food is mainly seafood, but good meat dishes are available. The quality, presentation and value for money were excellent. We ate there on both nights of our short stay because the first evening was so good, we needed to repeat it !
