“Great food with a fantastic view”

We enjoyed a lovely dinner on a summer evening sitting on the terrace overlooking beautiful St Lizier and the Pyrenees. The food was innovative and delicious and the waiting staff were attentive and helpful. This is a high quality restaurant serving interesting food and wine and highly recommended for a special occasion.

“The food is on par with the view”

I found this restaurant thanks to the positive reviews on TripAdvisor, and we went there because they also have a vegetarian menu (my girlfriend is vegetarian). What a treat!
The first thing that strikes you is the view over the Pyrenees from the terrace is stunning. Service was formal, friendly and flawless. At first, we were a bit worried we weren't wearing our best clothes, but during the evening we saw more people in tourist outfits and it was never frowned upon. This is not a pretentious place, but it makes you feel special as a guest.
The prices are very fair for what they offer. Even one of the more budget-friendly bottles of wine (at 16€) was excellent quality. I took the cheaper menu at 29€. Starter was a "farmer's egg" - I had no idea you could make a simple egg taste so good. Then Pigeon, nicely prepared, and chocolates for dessert. My girlfriend had the vegetarian menu. The main dish is a vegetarian wok, maybe not the most inventive dish but the quality of the products was top-notch.
A nice finishing touch was that the chef came out to ask every table if everything had been well and he took some time for some talk. I felt he was really passionate.

The high praise for this restaurant is merited. Friendly service and great food at a reasonable price. If you are within an hour's drive of Le Carré de l'Ange, go there. You won't be disappointed.

“A taste of the Pyrenees”

Standing in the historical "Palace of Bishops" in Saint-Lizier, which overlooks a splendid view on the Pyrenees mountains, "Le Carré de l'Ange" is an amazing restaurant. You would not expect such excellence in an old village off the beaten tracks of France. An original mixture between traditional local dishes and stylish creative cooking. The table setting (cutlery especially) and the summer service on the terrace are unique. A rare opportunity also to taste the newly born but still secret bio Ariège wine (Côteaux d'Engraviès).

“Stunning. Unforgettable.”

The finest food I've eaten in the Couserans. This is quality cooking that would put many London restaurants to shame.

The prices reflect the quality of the ingredients, and the care of the chef, and so offer true value for money. The dishes are inventitive without being frivolous, every flavour packs a punch and nothing is done without the utmost attention to detail. The staff are surprisingly warm, and when the chef came out, he took time to chat about what exactly made his pain d'epices-encrusted carrots so fabulous. That is one dish I will never forget.

For many years the Palais des Eveques was a ruin, just a small dusty museum and crumbling walls. Stunning views, but nothing more. Now it still has the views, but hosts a top class interactive visitors centre and this five star restaurant. Now I'd say, if you're in the Couserans, don't miss it.

“Excellent !”

The dinner menu is spectacular with formulas starting at 39 euros plus wine. It is not inexpensive but well worth it. If you are planning on going all out once or twice this is the place to do it. I have never tasted better Foie Gras, Everything was fantastic and the service could not be better However you may not find an english speaking staff member. This is fine french dining not a tourist place!
