Aux Quatre Saisons

Reviewed February 22, 2011

My boyfriend took me to stay at Aux Quatre Saisons for a few days over Valentine's Day and his birthday on a recommendation. We had not stayed in chambre d'hote-type accommodation before and it was such a lovely experience that we have already decided to go back next year.

Paul and Val's helpfulness and warmth was apparent before we even arrived with a host of recommendations by email (spa in Perpignan, walks around the local area, securing a rose for me V day!) as well as things to be careful of on arrival (speed policeman hiding between trees trying to catch you out!).

Greeted by Paul in full pinny regalia (he is a fantastic cook), Cartoushe the dog and Lucy and Chance the cats, we entered the warm house to find a roaring log fire and instant offer of wine and nibbles to help us relax after our journey from Toulouse via Carcassone. After a few enjoyable hours of exchaning stories of travels, food and wine with Paul and Val, we realised we hadn't even seen our room (which was beautifully decorated in country-chic style and with a fantastic view over the mountains and aquaduct) and it was time for supper at the village restaurant (which had been pre-booked by Paul).

We spent three fantastic days exploring, eating and drinking our way around the area, visiting the many nearby villages, Perpignan for the spa, Esperaza for the Sunday market and Coullieure for the seaside - each day coming back to the offer of joining Paul and Val for a glass of wine. When we'd failed to find anywhere open for lunch on a Sunday, they provided bread and wine to go with some cheese we'd bought at market and were kind enough to chill some champers and glasses for the birthday celebrations. We left feeling totally relaxed and can't wait to go back to share Paul and Val's hospitality and beautiful house again.

I was on my way back to Paris when I got invited by a friend to meet the owners of Aux Quatre Saisons. Their welcome was so warmhearted I couldn't believe anyone could be so curteous, complaisant and devoted towards perfect strangers. With only a 30min notice, we had a great dinner cooked by the owner himself, who is quite a spectacular cordon bleu. From appetizers to dessert, cheese and digestive, everything was exquisite. They were promoting local food in everything we ate, which I believe is very important. They are also very entertaining as great stories and anecdotes were told all evening long, and made this evening a truly memorable one (along with the great meal of course). From now on, I can't imagine staying anywhere else when I'll be visiting this region of France and I truly reccomend it to anyone. The rooms were also very lovely. In fact, the whole house is a hidden gem.

My husband and I spent a very happy night at this chambre d'hote. Our host Paul made us so very welcome. The rooms are a joy and the setting in this small french village is lovely. We would not hesitate to recommend Aux Quatre Saisons.

My husband and I stayed at Aux Quatre Saisons for 5 days in October. It as like being enfolded into a Family. Paul and Val, the hosts of the B&B are both interesting and welcoming people. We had the spacious apartment on the top floor. It has 4 skylights that look out over the mountains, the viaduct and the village. If you want privacy this is definitely a little world unto itself. We enjoyed, great conversations and quite drinks with Paul and Val and even got invited to spend time with their wonderful friends. It was a very special time for us. I would Caution you, however, to make your visit near the end of your trip, because we kept comparing our other accommodtions with theirs, and quite frankily, There is no Comparison. Thanks for a Great Time. Donna and Mark

We arrived unexpectedly at Aux Quatre Saisons in torrential rain. Paul was just lighting the fire and we were given the warmest of welcomes both literally and metaphorically! This is a great B&B, we stayed three days, we would thoroughly recommend it.

Stayed one night on our Atlantic to Med cycling tour. Received a very warm wlecome from Paul and Val who could not do enough to make us feel at home. Top qulaity, great value accommodation in a wonderful location. Very good evening meal in local restaurant.

Would definitely return with the bikes to use as base (Axat is at foot of the Port de Paiheres @ 2001m) or to come back with family to stay longer in the apartment.
Recommend to any cyclists looking to stay in this area
