Prior to our visit, party of 4, I wondered how they achieved the rating of 105 / 106 reviews , Trip Advisor = Excellent. The remaining 1 was rated as very good. This became clear after visiting with these extremely generous, English speaking hosts, who work very hard to provide guests with a very comfortable stay. They are able to balance this very well with value for money.
We judged the stay here as the best value for money of our entire trip. Indeed, with the evening meal and room combined ( demi pension), this was a bargain . We found out that rates are kept low to accommodate many of their guests who are friends and family of local families. They accurately state that they aim to provide a high level of comfort, not necessarily luxury, and indeed they do. This would be the highest level of comfort one will obtain for the price.

Paul and Val are originally British. They are extremely responsive to e mail communication and I would definitely recommend making reservations with them directly through their web site. They have a very good knowledge of local resources, which is especially valuable when hiking.

LOCATION: A very easy, pleasant walk about 1/2 mile south of the center of town ( Mairie). Though the Sentier Cathare ( The Cathar Way) hiking trail enters and leaves through the northern part of this small town, it is definitely worth the short walk.

ROOMS: Up stairs in this recently renovated historical old building, in a very pleasant garden. Very well equipped fridge in each room, which includes free beer, wine and soft drinks. In addition, kettle with tea and coffee.
Our room with a view of mountains and historic railway viaduct, was small,but very comfortable, consistent with the age of the building. Bathroom en suite with shower, also small but very good for our needs.

THE MEAL!!! Paul provides an exceptional 4 course meal, actually amazing for Eu 20, and in the comfort of the home as well. Do not consider eating elsewhere, you would miss something very special. I learned that Ch. d’Hotes are strictly regulated in France as to the type of catering they may provide. Accordingly, they are unable to provide an a la carte menu. He and Val provide one meal, quite appropriately, as if you were staying in his home as visiting friends, and indeed that is the atmosphere created. As we were the only guests that evening, he was able to provide us with a magnificent meal which accommodated our medically required restricted diets, including soup, grilled trout, a remarkable melon and ginger desert and followed by a most ample cheese board.
ncluded were all drinks from aperitif, through appropriate wine with each course, and followed by Port. All excellent. As mentioned previously, amazing value for money.

THEY GO THE EXTRA MILE; We were hiking a portion of the Sentier Cathare, ending in Axat. We had planned to take one of the pretty infrequent buses to Quillan in order to get train transport to Carcassonne Airport. However, an urgent situation evolved due to SNCF Train strike and we needed to get to Quillan sooner than planned, in order to make alternative transport arrangements. Paul offered unhesitatingly to drive us the 11km to get there, and indeed the further 1.5 hours to Carcassonne if necessary. This solved our problem. He was able to get us to Quillan early in the morning which enabled us to arrange alternative transport to Carcassonne. He refused to accept any payment for this service which was very valuable for us.

It was very nice to have a chance to discuss with other guests while having some glasses of "champagne". Cheers, santé or kippis as well as hölkyn kölkyn in Finnish.

We had great meals and all drinks suitable for food. I was very good atmosphere in this house with all nice people. I´ll recommend everyone to feel it. The experience was lovely.
Axat village is also beautiful and it is a good idea to walk to the "city centre" before dining.

At first glance the surrounding are stunning. The B&B is tasteful and quirky. Lovely stone building. Room has all you need and free mini bar with all you need including alcohol. The owner Paul is very welcoming and can tell you all you need to know about the area. I would absolutely recommend eating dinner at the B&B. Paul cooks it all himself. Well presented and delicious. He takes extremely good care of his guest. So glad I choose to stay here for 5 days with my other half.
Cartouche gave it all a touch of home. It was a relaxing and perfect getaway!!!

... I can only echo what so many others have said before. This place is just perfect. Charming, cozy, quirky.

Paul is the perfect host, making you feel very welcome fom the first minute you arrive till the moment you (regretfully) depart.

The blue room was cozy and very French. The shower was "unexpected". And dinner was just perfect. Great food prepared by the owner/manager/host, with lovely local wines in abundance (my liver may take some time to recover), and all the guests from around the world eating together around one large table.

And finally, my wife and I had a little difficulty with our hire car (my fault) but thanks to Paul going above and beyond the call of duty what could have been a real spoiler was overcome with no difficulty. Thanks so much Paul.

So if you're looking for a perfect small hotel in beautiful French countryside, wiht good food and great company, then look no further.

Can't help but agree with other reviewers about Paul & Val's hospitality - top notch! We had 3 days in Axat, using it as a base to explore southern Languedoc. First night dinner was great, excellent food, convivial company and we were all kept on song with Paul's wit and vitality - and his fantastic cuisine. Our room was very comfortable (Blue Room upstairs) quite roomy, quiet and nice garden outlook. Paul had second night off from the kitchen, but we had no hesitation opting to dine in on the third night - and we weren't disappointed. Once again the anecdotes flowed, as did the wine.... and once again, the food fantastic - couldn't be faulted (lamb shanks just hit the spot for a couple of hungry Kiwis after a day clambering up to a couple of Cathar castles on rocky crags). A real treat in a little village tucked away in a charming corner of rural France - perfect way to end our week tripping around the backroads of Languedoc.

We can only echo what others have already said. This wasn't quite the area we wanted but the reviews of the chambres d'hôte were so good that we just had to try it out. We arrived far too early but were instantly greeted with warmth and affection and welcomed into the fold. The infamous Cartouche gained two more fans and we were treated to lots of ideas on what to see and do in this region. Both Paul and Val are exceptional hosts and we had some very memorable and fabulous meals during our stay.As noted elsewhere, one of the real plus points is Paul's cuisine and the ambiance around the meal table is second to none. We really enjoyed talking to fellow travellers and hearing thoughts on places to visit. We will be returning just as soon as we can.This is a holiday experience not to be missed,à ne pas manquer!

What a fantastic place and what amazing hospitality. We stayed 3 nights and loved every minute. In the evenings Chef de Cuisine and all round bon viveur Paul produced wonderful food, poured copious wine and delivered entertaining banter. In the morning the breakfast table was laden with choice. This is a charming stopover with equally charming hosts and we shall go back again. Especially we liked their little dog Cartouche who brought a touch humor to the evenings. Across the years I have traveled all round this globe - just occasionally you come across a gem. This is one I will add to my list.
