When we visited, we stayed at the Fairmont, had a few days to walk about and see the sights. Don't know what did it exactly, but here is where we felt most in touch with the historic old town. The Musee Place Royal was a perfect place to learn about the commerce & politics of Quebec's founding. Here you're in the middle of all manner of shops, close to museums and restaurants . A must see.
