Used fellow trip advisor recommendations for this one and as usual, I wasn't disappointed. The chef may not have a michelin star yet, but he should be in the running for one. The 5 course meals (there are 3 variations to choose from depending upon the protein and the starter chosen), are centered around preparing the same protein, but 3 different ways. The foi gras 3 was a highlight, as was the Elk. I would encourage you to add on the optional wine pairings for your meal. It's another 100US but worth it and really adds to the dining experience. The staff is young, energetic and very passionate about the presentation. The restaurant resides in one of those charming French-style chateau townhouses Old Quebec is known for in a really fun part of town (sort of the "middle" between Upper and Lower Quebec City.). Plenty to do right outside the door of the restaurant adds to the experience. It's pricey (easily $500US for 2 people with the wine pairing) but it will be the highlight of your gourmet quebec experience while in town.
