I love this place because the dough is so light. It doesn't feel heavy on the stomach. I choose my own ingredients and the service is super fast.

My husband tasted once and he decided to bring me along to try for dinner. When we first arrived, we were trying to find an English menu but there was none. We were told by a staff that for English menu, we could get it from the website and the restaurant provides only French menu. We ordered simple food for our dinner which were funghi alfredo and tuna pizza.

The pasta was quite delicious but it was quite dry, to my liking. Whereas for the pizza, it was crunchy and fresh. Normally, we prefer to take thin and crispy pizza. Somehow, for this pizza, it still tasted crunchy.

Terrible Pizza, went there today with 5 work colleauges.
Workers asked us 4 times who's pizza was who's.
They charged a dring to a wrong person.
We got our pizza and the bottom crust was not cooked at all, The crust was soggy.

Never going back
Staff needs management and better training

Brigade was a really nice discovery, probably one of the best pizzas in the downtown core.

Service is fast at the counter. They have two brick ovens in the back. Kitchen is open and you can clearly see your pizza in the making. Clean interior seating space. This restaurant is well managed.

They have Quatro Staggioni and that was my best pizza of 2018. Highly recommended, better than others, ingredients were fresh and crust was impeccable.

Went here for the first time after visiting their website. Seemed like an interesting concept. I wonder about 2 things: are the owners really certified by VPN? Do they use Caputo tipo 00 flour?
The pizza is decent but the whole "Subway" system ruins the beauty of authentic Napoletean Pizza tradition...

To answer your first question.
Yes both owners Grace and I went trough the VPN certification with success. This being said Neapolitan pizza is more than a certificate and in fact once you have a certificate you are really just starting your journey. Thousands of hours are dedicated after that to perfect your art. Temperature of the oven, time rising, ingredients, new pizza recipe, variation in temperature, fermentation process with starter, Pre-ferment etc etc. We are continuously challenging ourself to get better and train our staff to achieve better result every day.

Regarding your second question.
Yes we only use Caputo “00”, sea salt, water and yeast in our dough. We’ve experience a lot with other flours but always got the best result with Caputo.

As for the concept.
We have to go back to the beginning. Grace and I wanted to create a concept where people would be able to customize their pizzas, giving them more decision power into what they eat. But mostely we wanted to bring the essence of the authentic Neapolitan pizza spirit to it. Neapolitan pizza has been around for more then 300 years and it was and still not a fancy meal with white table cloths. It has become that way over the year around the world and we wanted to have a atmosphere where everyone would feel welcome and get what they want to eat. With that concept we were able to reduce the amount of employees needed to run the restaurant therefore being able to reduce prices of our dishes. That’s how we can sale Margerita pizza for 11$ instead of 14$ to 16$ everywhere else. Which is also in line with the original Neapolitan pizza spirit where it was not the food for the fortunate.
