We opted for the Royal table and the tasting menu that goes along with it. Our server, Kirk, is also a certified sommelier and along with the chef produced an amazing feast that played on our palates and overjoyed us at every turn. This is truly spectacular high-end dining. The pacing was well balanced so as not to feel rushed, but quick enough that we were never lingering about wondering where our next glass or plate was. Portioned appropriately as well, we were definitely full after our six courses and accompanying wine pairings, but not overly stuffed as I've felt with other pairing course dinners. The Empress Dining Room gets my highest marks for creating a spectacular gastronomic experience that highlights the island's riches and beyond. Choose the Royal Table option, you won't be disappointed!
