A recent trip to Vancouver brought my husband and I to the Hyatt Regency Vancouver where we tried the Mosaic Grill on our first night there. We usually shy away from hotel restaurants but decided to eat here as there was a large Canada Day parade right outside the hotel. The parade spectators were many and rowdy. Our server was definitely not on top of things--for example, after my husband had placed his order, she returned with the news that they were out of that item; incredibly the same thing happen two more times (the restaurant was practically empty). He ended up having eggs for dinner. My chicken dish was pretty good. A manager came by to apologize and offered my husband a free dessert.. The “rolls” (the size of a walnut) tasted like a first try in a junior high cooking class. Throughout the meal the service was inconsistent. We would not recommend this restaurant for dinner.
