If you want a central European dining experience while exploring Edmonton, Bistro Praha is the place to go.
Every bit of this place carries the feel of a true Czech restaurant as the founder was a Czech. This carries right through to our waitress who my girlfriend, in spite of her own excellent English skills, happily carried on communications with in her native Czech.
The food, service and atmosphere were all great. If there was a downside at all, it was the cost of a genuine Czech beer which was quite expensive by a Czech standard. However, it is an imported beer in Canada, so higher prices for it must be expected.
