“"Best New"... still some oddities”
Reviewed October 26, 2012

Enroute just named this restaurant "best new in Calgary". We have been there a few different times - for the evening wine scene, and for dinners. Last evenings' meal was good - just a little different. Two whole trout, perfectly cooked and tasty, accompanied by shaved striped beet salad, mild blue cheese dressing (a little too much liquid I thought), and some other unusual chewy dried fruit perhaps? It worked, but was one of the stranger taste sensations and combinations to my experience.
My companions' rib-eye steak (for one - they have an amazing one for 2 as well), was again perfectly cooked, and the accompanying bean and tomato sauce it sat on was tasty, but the kale (we were going for healthy here I guess) was much too spicy and overpowered the dish, and was left on the plate. All of the crispy potatoes cooked in duck fat were consumed though. Delicious!
The "Milks'" Wine list is strong and varied and always something suitable to match the foods.
Service is attentive and enthusiastic although I could do without the "runner" who brought out our mains, tapping on the back of my chair as he described the dishes. Also, seating can be crowded, and noisy.
Still, a great addition - the calamari dish is a terrific creation - to the Calgary food scene. Thank you Chef.

“A real treasure and a wonderful treat!”
Reviewed October 21, 2012

A first time visit revealed a wonderfully unique dining experience, which started with the unique decor, exemplary service and the exquisite presentation and taste experience with the food!

We shared the three cheese appetizer with the Cesar salad, both of which combined great taste and texture. The three mains were all different so we each had the opportunity to taste our own meals as well as to share each of the others. The portion size was terrific and each presentation was individual and unique. The Crispy Duck leg - which was two legs was perfectly cooked with none of the greasy taste that often accompanies this dish. The duck was accompanied with a corn succotash and guanciale which provided a wonderful contrast in textures. The second dish, Pig, was pork tenderloin wrapped with bacon inside a sausag topped with a wonderfully flavoured smokey sauce on top of a celery root purée. Exquisite. Finally, lamb orecchiette a beautifully flavoured dish with subtle textures. This restaurant provided one of the best dining experiences ever and the biggest surprise was the very reasonable price. This will definitely be a regular spot every time I visit Calgary!

“A very unusual and intriguing concept”
Reviewed October 7, 2012

We visited Model Milk on the Sunday before Thanksgiving.

After a slightly-too-long wait at the front door we were seated. The decor is highly unusual -- the location was once a milk factory (hence the name) and the decorator exposed the old brick walls with the old milk ads. The furniture is bistro-ish -- unfortunately I found the tables with one big leg down the middle and with four diagonal extensions at the foot are not comfortable, there is no place to put your feet!

On Sunday there is just one dinner available -- the three course prix fixe for $35. Our party of three started with a salad and a chantrelle risotto for an appetizer. This was served "family style" with the dishes in the middle of the table, but we found the helping size rather small for three -- indeed the party of two at the next table got the same amount. The waitress also had to apologize for the long wait, another server had taken our order and given it to someone else. But in particular the risotto was absolutely wonderful which restored our good mood.

The chaos got worse -- the wait for the next course was over 40 minutes; other tables that arrived after us were well into their main course and we were still waiting. Finally the main course arrived and appropriately for thanksgiving it was turkey and stuffing, mashed potatoes, sweet potatoes, succotash and a kind of gourmet cole slaw. Everything was delicious, but this time more in a down-home sort of way rather than innovative cuisine. This was perfect for Thanksgiving, the chef had already demonstrated his artistry with the risotto.

For dessert we got a small piece of smoked pumpkin pie, an unusual and excellent concoction.

The restaurant caters mainly to young people. The average age seemed to be low thirties, the place is noisy and reverberates with laughter and loud conversation. In fact the website tells us that Model Milk aims to re-create the atmosphere on friends getting together for a meal in a home rather than in a restaurant.

All in all I would say that the owners and chef have succeeded with their concept. Unfortunately the actual tables and the poor service (I mean the timing, not the attitude which was very pleasant and apologetic) detracted from the experience.

“inventive - amazing service”
Reviewed September 17, 2012

Lots of interesting things to try and share. Amazing attention from management and staff when we regretted our wine choice.
Some menu items a bit over interesting but get an A for effort. Some downright fun and yummy. Would go again when menu changes.A fun place to take a group. Could be accused of being overly trendy but sincerity of staff seems to indicate there will be lots of interesting stuff to try in the future.
by the way -really enjoyed the wine picked for us by the manager/owner.

“Excellent food, superb service and great atmosphere”
Reviewed September 12, 2012

We stumbled upon this place by chance while walking uptown seventeen on a Tuesday evening. Intrigued by the name we stepped in and had one of the most memeorable dinners in recent memory.

The food is exceptional, the wine list extensive and not hugely expensive, but what sets this place apart from most restaurants in Calgary is the superb service. The entire staff is attentive to your needs and very knowledgeable about the entire menu, the drinks list and the different pairings. They appreciate your feedback and are continuously refining the menu.

There are different sizes of portions, for all appetites and party sizes and the atmosphere gets quite loud when the place fills up (on a Tuesday evening no less!).

Be sure to ask about the intriguing name and the history of the building. It is all part of the experience.
