Part of the Trotter family of restaurants in Merida, Panchos is conveniently located in El Centro within walking distance of all major cultural attractions in centro. The food is excellent and served in a timely, efficient manner. Cost is geared to the tourist trade so it's a little high but not exhorbident. Make sure to have the Maya coffee at the end of your meal - the presentation is a show unto itself..

we had dinner just a night, but it was amazing. very pretty location, a patio with many trees....but food...food was wonderful...fried banana, beef fillet, grilled prawns. everything was well cooked and good-tasted. excellent mexican food!

It's a shame that my experience at Pancho's, causes me to voice this bad review because this restaurant has all the flair of a truely Mexican restaurant. The outside courtyard with all the trees and plants with a view of the nightsky and the different levels of sitting to enjoy their good food is outstanding.
The problem is not having the proper staff to get your food in a timely manner (we waited for one hour and thirty minutes) to finally get our order. Meanwhile, the D.J. decided to switch for relaxing mexican music to 70's and 80's English disco type music which was constantly blarring out, making our wait tortuous.

This was recommended by our hotel. great atmosphere, nicely decorated. happy hour, friendly staff. we liked it so much that the first time we just went for drinks. the second time we went for drinks first and then dinner. Tourist prices. They have Yucatecan food, try the sopa de lima.

Panchos was highly recommended to us by a local, so we thought we would try it out for dinner tonight. The ambience is fantastic, set on three different levels, with the cool breeze on the open terrace/balcony being a refreshing end to the days heat. There is also a DJ spinning some good tunes.
The menu has a slim picking of Mayan classics such as panuchos and one or two others, some 'botanas' or snacks, and the rest of the fare is typically American - steaks, chicken and seafood. The food is average, the prices quite high, but what irked me the most was the level of tip solicited. The cheque has suggested tipping levels starting from 10% for good service, 15% for better than good and 20% for excellent service. One would assume that the guest gets to decide what level of service was appropriate, however at Panchos the server decides this for you. Our bill came to us with a 20% tip tacked onto it! We had a soup, 2 not very imaginative entrees, a margarita and a can of coke, so our bill did not warrant such a tip tacked on to it - I would probably shrug it off had we been a big group and ordered many dishes, however it was just the two of us, and 3 dishes ordered in total! I have nothing against tipping generously but I do not agree with a server determining this of his own accord. Given that our server was great, we would have tipped him generously but we certainly did not appreciate the tip being tacked on. That we found to be rather cheeky. Having been in the Yucatan Peninsula for a couple of days now, this is the first time we have experienced this - all other restaurants state on the menu that a tip is not included, but do not tack it onto your final bill, leaving this to your discretion.
So, bottom line - go to Panchos for a drink, enjoy the atmosphere for a while but do not waste your money on the food there. Merida has much nicer places to eat at!
