Wow, an incredible seven course tasting menu with wine pairings. Every bite was delectable. Tiny portions, but by the end we were quite stuffed. The small portions allowed you to really focus on the intensity of flavor combinations the chef orchestrated. They change their menu every six months, and we were fortunate to come only a week after a new menu was introduced, and it seems to have already been perfected. Service was incredible, led by the delightful Webster (yes his real name, mother loved the show), and several other attendants that were very well coordinated in their synchronized deliveries.
Some areas for improvement: Very brightly lit, which is unusual for a high-end / romantic restaurant. Could benefit from some mood lighting, candles, or even darkened overall with LEDs focused on plates if they wanted to light up their creations. Also orchids were dead on table, kind of a downer 'feng shui'. This is a LONG meal - took us 3 hours start to finish, though it didn't seem that long and there never seemed to be much of a lag between dishes. Also they try to sell you on severely overpriced wines before the meal - stick with the wine pairing. For example - a 2009 Silver Oak Alexander Valley Cab was $2500 pesos, over $200, and just bought a case at home for $58 USD/ per bottle, and it's more like $100 at US restaurants.
