Nora Valencia is a native of Oaxaca and passes on time-honored recipes and techniques and some new ones of her own to her enthusiastic students. Almost 20 years experience in instructing classes has led Nora to be filmed by the BBC, French TV, Japanese Special live broadcast as well as numerous chefs form the U.S. Nora is also a federally certified tour guide who enjoy leading her gastronomical and textile tours.

Nora is an absolute darling and the experience with her was one of my favourites in Mexico.

Instead of a sterile school atmosphere, we soaked up the culture in the local market, learning about produce specific to the region and general Mexican ingredients.
We then headed to Nora's gorgeous kitchen where she showed us how to make several gorgeous dishes, explaining throughout the background behind the dishes and their significance to her personally as well as to local culture.

I found the personal touch incredibly endearing, Nora is vivacious and sweet, and her kitchen is stunning. I wanted to move in!

I would recommend this experience to anyone, there is a real personal touch and at the end of the class we all got to sit at her beautifully set table and enjoy the food we had all prepared together. I didn't stop smiling throughout the whole day!

This is my second trip to Oaxaca for Dia de Los Muertos with my mom. The last time we did not do a cooking class and I regretted it. This time we had thought we would do it at Casa Crespo, but when we went to see about booking, there was no one else signed up for a class on the day we wanted, and we really wanted it to be a social experience as well as education. So we signed up for a class with Nora. Now we knew Nora and her awesome cooking because we have stayed at Casa de Mis Recuerdos both times we've visited Oaxaca.

Our class in particular was based around Mole Negro, but also included making 3 additional dishes and a trip to the market. The class is in her charming home and in addition to making the recipes and steps approachable, she shares her knowledge, culture and familial history in a warm and authentic way.

I couldn't recommend this experience enough. But even if you don't go to Alma de mi Tierra, you should still come to Oaxaca.

A group of 5 friends joined a couple for an incredible cooking experience. We started with a tour of the La Merced market where Nora gave us so much information about the chiles and other foods in this market. It was a wonderful introduction to the class.
Nora included 2 dishes with squash blossoms (which our group specifically requested) as part of the 4 course meal we learned to prepare in her beautiful traditional kitchen. She has adapted her grandmother's recipes for a wonderful meal. We were amazed at the development of the flavor of the mole sauce over our cooking time. Everyone felt the class exceeded our expectations. We enjoyed an appetizer of stuffed squash blossoms with our homemade salsa, followed by a hierba santa based soup with squash blossoms. The main dish was the mole over pork and chicken with a mint-enhanced rice, hibisscus cold tea, and corn tortillas. We topped off the meal with Kahlua gelatin with slices of kiwi and cream. We received a set of all the recipes, including suggestions for adaptations.
Nora is very knowledgable, encouraging, and friendly. Her enthusiasm for her family traditions and willingness to share her experiences made this more than cooking class. You won't be disappointed.

We recently took a cooking class with Nora when we were in Oaxaca. The experience was great! I took the class with my boyfriend and since it is low season, we were the only two in the class that day. The day before the class, Nora went to the market and bought the main ingreadients and did already some basic preparations for our class, so that we would not loose time during the class. The day of the class, we first went to the market with her. We bought several last ingredients which needed to be really fresh. She showed us different vegetables and spices on the market which can be only found in Mexico and told us about them. There are so many varieties chillies!! She also told us about the herbs and how they help with certain problems and about customs etc. We smelled or tried everything. It was really great and we would never learn so much about the food and also about the culture and customs if we would go to the market on our own. What we cooked was our own choice. Nora gave us some options when we booked the class and we decided to cook some meals which are really typical but which we can repeat at home as we can find the ingredients or can easily replace some ingredients we used during the class with others. So Nora showed us how to prepare the food and how to cook it and we assisted her during the class. It was really interesting and exciting. She was really organized so we always had something to do and it was not too fast. After cooking, she served the food very nicely and it was delicious!! Not only the cooking class was good, but she knows so much about the Mexican culture, believes, attitudes etc. I can really recommend it!

Nora is an excellent cook and is very knowledgeable about the local ingredients. We started our sesion with a tour of the market and learned about the different ingredients that we would be cooking with and the great variety of chiles and spices. We spent the next several hours preparing our four course gourmet feast. I can not wait to get back home and try some of these dishes myself with the receipes she provided. If she runs another class that is not full you have the opportunity of being invited to partake in their hard work. We were lucky enough to have been able to do that and so we enjoyed another totally different feast for a very reasonable price.
