Escamoles con Nopales. You are in for a treat. Please, have them and then inquire about their humble origins. This was a dish reserved for the Mexican aristocracy, and once you try it you will know why.
Lamb, two new variations. With a sweet fruit sauce (adobo) and in chile sauce (pasilla). Both great, but IMHO the adobo version was the best.
