With typical Argentinian cuts this restaurant offers a great variety of Cuts. Try the "Vacio" very flavorful or the Lomo center cut beef filet.

Great selection of Wines. The only problem is that the hostess are a little high brow and tend to look down at you.

I thought I might have been the only one who had to pour his own wine at this place; our very expensive bottle of red was just left on the table and our glasses were never refilled by the waiter. I had just had eye surgery and ended up pouring a full glass onto the white tablecloth! The food though, especially the empanadas, roasted peppers and of course the meats were the best of the half dozen or so Argentinean restaurants we checked out in Guadalajara over many subsequent trips to the city. However, the ambience is the least appealing of them all, with bright, almost fluorescent lighting. Have not gone back there as we decided we liked La Vaca Argentina the most.

The restaurant was recommended by various people, including hotel concierge and as it is supposedly the oldest an best known in the city we decided to try.

The wine list seemed a bit pricey, but good selection of argentine and chilean wine, also Monte Xanic as excellent mexican option.

There is not the usual meat display where you can pick your cut, but the waiter did explain the differences.
We ordered as a starter empanada de queso (veeeery small) and provoleta (not melted enough).
As main courses we ordered the Churrasco prime which is the most expensive main course, medium rare, and a bife de chorizo, medium.
The waiter mixed it up, and the prime was medium-done, while the bife was rare.
When we commented on it, the waiter blamed the kitchen, but didn't apologize or do anything about it. It might not be a big deal, but for somebody who decides to order a 50$ piece of meat, and likes it in a certain way, getting it in another way, is very disappointing.
Also, we had the impression that from the moment we commented this to the waiter, his attention to our table extremely dropped. We poured our wine and water ourselves, and also had to ask for the dessert menu.
This shouldn't happen when you spend 150+ USD per person on a meal. Won't go back.

This restaurant is simply an institution in Guadalajara!

I studied in GDL many years ago and remember dining at La Estancia Gaucha many a time and always enjoying a very good cut of steak. Fortunately, things over the years have not changed. The quality of the food and the service is first-rate.

Hector, the Maitre 'D, who warmly greets every person as if welcoming them to his home, keeps a keen eye on all of his service staff and it shows.

If you are lucky enough (maybe even chosen!) to snag a Cuadro, take it! They usually cut four to eight of these a day and the usually they're gone by the lunch rush at 2PM. If you're early and dining with a regular, you might get a taste of beef heaven!

The steaks are simply served with a fresh green salad, dressed with oil and vinegar. The empanadas as an appetizer are great, as are the fresh molcajete (volcano rock) and chimichurri sauces.

Can't wait to get back for another great steak!

There are no shortage of fine steak houses in Guadalajara but there is something special about this one. Perhaps it is the large nice open room or the wait staff that have been there for years or the wonderful beef. It's the beef for sure. Do not worry about getting full as the portions are large and all you need is a nice salad and you are set. Try the filet with grilled onions or any of the other steaks. If you do not speak Spanish or know that meat is cut a bit different in Mexico than in the US do not worry. They will get you through it all and you will be full and happy. They do have a very nice wine list as well but let me suggest a Mexican red from L.A. Cetto in the Baja. Buen Provecho
