Yes Marisma is technically a food truck and food trucks dot the streets of Mexico wherever you turn, but this in no mere fast food operation. All they make is fish and it's fresh and made to order. Order a fish taco and the fish is taken fresh from the ice and dipped in batter and fried in clean oil in a shallow pan (not in a deep fryer) while a lump of masa is flattened into a taco and cooked fresh on a comal while you watch. Finely shredded cabbage is added before it's handed over to you to dress any way you'd like; for me there is only one choice: the pickled onions in the chipotle sauce. At a little over $1.00 a piece, how could anyone complain? (I know, there are people who can complain about anything given the forum). My last visit was lucky in that a fresh pineapple agua fresca had just been made and it was the perfect drink for lunch. They are only open in the afternoons for lunch, and in high season the lines can get crazy long, so go before 4:00 and be patient - it's worth it.
